I've been babysitting this sweet boy and Evan is going to be such a good big brother :o) He's a little jealous...like he all the sudden forgot how to feed himself the first day we had the baby. He would say, "mama help?" ha...nice try kid.


You know your child is tired when they ask to go to bed. Evan pulled me by the hand the other night and said, "night night mama." So I went into his room. We always say a family prayer so I knew he would go get Greg next and Greg was on the phone, so he said, "daddy night night" over and over until Greg finished his conversation.

Then the other night we were saying a prayer and Evan wasn't ready for bed, so he got up from kneeling and whispered, "bye bye." nd ran out of the room....such a stinker

SSOOOUUUPPP

You know what I love about fall and winter? Hot chocolate and soup. Not together of course, that would be really gross.

soups we have eaten recently (I used Great Northern beans for both recipe's. I buy bags of beans and make a ton and freeze them and just thaw as we go. we eat a lot of beans around here)

Cannellini and Cabbage soup
 Recipe

1 tbsp olive oil
3 cups thinly sliced cabbage
2 carrots, sliced
6 cloves of garlic, minced
1 tsp dried thyme
1/4 tsp black pepper, 
2 cans low sodium chicken broth
1 can diced tomatoes, undrained
1 cup of water
1/4 cup tomato paste
2 cans cannellini beans rinsed and drained

1. in a large pot heat olive oil over high heat. Add cabbage, carrots, garlic, thyme, and pepper; cook 2-3 min
2. stir in broth, tomatoes, water, and tomato paste. Bring to a boil, then reduce heat. Simmer, covered, for 8 minutes, or until vegetables are tender, stirring occasionally
3. mash half the beans with a fork. Add all beans to pot. heat through.
serves 6
164 calories, 11g protein, 9g fiber, 4g fat, 

I've been experimenting with my veggies lately. If there is a vegetable that I hate more than broccoli, it's carrots. I decided I need to be better and eat more of them, so I found this idea on pinterest and did my own thing with it.


Carrots with mozz cheese (because I didn't have Parmesan), rosemary, paprika, and salt. Baked at 425 for 10 minutes.

*We made Kale chips over the weekend and my child LOVES them! You have no idea how much this excites me!

Junior bowler and a crepe recipe

We play bowling on the Kinect a lot as a family and Evan loves it. He's constantly asking for, "bowing"



Evan loves wearing his underwear on his head. He always says, "unwear on peas." so cute.

Evan and I made crepes for him and Greg for breakfast (I tend to have a hankering for spinach smoothies for breakfast)

recipe?
Crepes
3 tbsp butter, meltes
1 cup flour
1 1/3 cup milk
3 eggs

Filling
8 oz sour cream
8 oz cream cheese
1 cup powdered sugar

Beat the eggs and milk. melt the butter and then add butter and flour and beat until smooth. It will be really runny. 
I could use my griddle, but it's harder to pick the whole griddle up and move it around, so I just use a skillet set on medium heat. 
Spray with non stick cooking spray. I fill the ladel about 1/4 or 1/2 full and then pour in the pan. Pick the skillet up and move it in a circular motion to spread out the mixture and it seriously takes second for them to be done. Then flip and cook for a few more seconds.

Filling
I just put it all in a bowl and mixed it with my mixer, but it was a little bumpy, so maybe cream the cream cheese in with the sour cream?

Fill the crepe with about a 1/2 to 1 tbsp of the filling fold it however you want and add powdered sugar if you like. Greg added syrup to his.

Grilled Chicken with Roasted Tomato and Oregano Salsa


I found this on pinterest and we made this a couple days ago and it is amazingly delicious! Oh my gosh, the flavor! It's easy and so so yummy. I had it over rice and Greg had it over Quinoa. I was craving rice for some reason and I only had enough for one person, so I just finished it off. We had Baked potatoes with it too! I highly recommend it!

Serves 4

INGREDIENTS

  • 2 tablespoon olive oil
  • 2 tablespoon chopped fresh basil
  • 2 cloves garlic, chopped
  • 1/2 teaspoon chopped fresh rosemary
  • 1/2 teaspoon fresh oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon chopped fresh thyme
  • 1/4 teaspoon freshly ground black pepper
  • 4 boneless, skinless chicken breasts (about 6 oz each)

Salsa

  • 1 pound fresh tomatoes, diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 medium shallot, diced
  • 1/2 cup diced onion
  • 1/2 small jalapeño, cored, seeded and minced
  • 1 teaspoon minced garlic
  • 1 tablespoon chopped fresh oregano

PREPARATION

  1. Combine first 8 ingredients in a plastic bag. Add chicken; marinate at least 30 minutes.
  2. Remove chicken from marinade; cook 5 minutes. Reduce heat to medium-low, flip chicken and add leftover marinade to pan. Cook 5 minutes. Reduce heat to low. Cover chicken; cook 10 minutes. Divide among 4 plates; top each with 1/4 of the salsa. Serve immediately.
  1. For Salsa

    Heat oven to 400. Cover a baking tray with foil. To make salsa, spread tomatoes on tray; drizzle with oil. Add salt and pepper. Bake until lightly browned, 20 to 25 minutes. Combine tomatoes, shallots, onion, jalapeño, garlic and oregano in a bowl. Coat a large skillet with cooking spray. Heat over medium-high heat.

clean whole wheat pizza crust



We make homemade pizza often and I always use this guilt free crust

2 cups whole wheat flour (I use Bronze Chief, I'm not sure if it's only in Utah or not) 
1 cup warm water
1 tablespoon yeast added to warm water allow to become frothy
1 tablespoon honey

mix it up, let it rise 5-10 min, spread it out, and poke it with a fork.
Bake at 350 and for 7 min.

Evan's latest cute things:
Every time he runs into a person or an object (like the kitchen chair) he says, "oh, sowwy"
"mommay, c'mon!" he says mommy like a little british boy.
Have you ever seen the rudolph classic movie with the clay characters? Well, Evan loves that movie and he says, "ladolph?" When the snowman comes out to tell the story he kind of wiggles so Evan says, "Noman, no man" with a wiggle.. take a look at the video

Good things

Things that are great?

-Having dance parties with my husband and little child.
-Evan learned up and down by watching me do squats. Now he pulls his pants up and down and says, "up, down, up, down."
-Being married for more than 5 years and still being able to have 20 min laughing fits nearly everyday.
-Evan woke up the other night and came into our room and grabbed my hand and said, "mama night night?" He wanted to be tucked back in.
- I wasn't feeling good the other day so Evan tucked me in with pillows, blankets, and stuffed animals and said, "night night wuv you"
-We are all set to move back to Ohio the day after graduation. My official last day of work - Friday April 19th :o) 
-My husband is going to have his Masters degree in 3.5 months! He's awesome.
- We had a 2 hour break in between cases at work, so a scrub and I got a work out in... in the OR. I'll be sore for 3 days. Sometimes, I love my job.
-Spinach and banana smoothies with a cup of water.
- My husband does dishes :o)
-Sheldon's sick song- (youtube it, it's hilarious) I may have sung that today (very loudly) with an anesthesia provider during a 6 hour case....we get bored- clearly. 
-Friends. I love my friends and I am going to miss them all so dang much. They will probably be the only reason that will make me cry when we leave. 
-My boys. Oh, how I love them two. How do you ever officially decide to make the decision to add another baby into the mix and feel ready to actually do it? That was a very confusing question...
-The Book of Mormon. and our - read it in 90 days challenge.
-I bought super cute knee high boots
-Love. Lots and Lots of Love

Happy New Year!


2012 was a great year! I was thinking yesterday how fast it went by and how great it was! I'm thinking 2013 is going to be even better! We finished 2012 by watching a lot of The Big Bang Theory...we are completely addicted!Greg and I actually stayed up to watch the ball drop!  First time in 5 years of marriage! We then went straight to bed like immediately after it dropped haha. I was so excited for the new year last night because we have some big changes coming our way and I can't wait. I'm excited to watch our family grow and see where life takes us. 
He's so big!

I am so glad I caught these two like this. Greg is such a great hands on dad. Before I got married I always hoped my husband would be just like this with our kids.

Sometimes, playing in chili is more fun than eating it. 

in 3 years there is going to be a real back pack on his back...maybe 2 if you count preschool.

My little helper. He loves to be involved in everything and I love it. I hope he's never too cool to help his mama!

Evan and I made cinnamon rolls this morning . It's probably more accurate to say I made them while Evan drove his matchbox cars all over them, which resulted in may re-rolls.  Many will be frozen :o)
I love his voice! I love the way he says cookie, but he really wanted a chip, so he chose to say, "ship" 

He normally says cookie like "cooookie" but this is what we caught.
